Abstract
Bananas are a fruit that must be transported under specific conditions to avoid ripening before they reach their destination. Fruit ripening can be quantified by examining the levels of glucose residues that are hydrolyzed from complex carbohydrates such as starches. This study set out to determine whether banana ripeness could be quantified using a DNS assay.
