Arabic Dish (Kunafaa)
History
“Kunafa” originated from Egypt several decades ago and is one of the foods in the custom and tradition of Ramadan Kunafa was initially introduced when the Fatmid prince did not find it easy to fast as a result of their appetite. This meal aided in making the people full”.
What is it?
The meal is a Middle Eastern pastry prepared cheesecake. It is baked in a cake pan so as to give it the browning crisp appearance for your Kunafa.”
Significance of the dish
In Ramadan, we fast for more than 11 hours, and so we prepare this meal because it gives our bodies the needed calories and energy, which comes in handy in this month.
Recipe/Directions
Ingredients- for serve six people
5 cups of kataifi shredded pastry
Four tablespoons of barbecue ghee (melted)
8 Kiri squares
Three tablespoons of plain yogurt
Two tablespoons of rose water
One tablespoon of pine nuts (roasted and sliced)
Ingredients for preparing sugar syrup
One and a half cup of sugar
Two cups of water
One tablespoon of orange-flavored water
Procedure
This is given according to the Middle Eastern Foods website, where the procedure is as:
Apply grease on a shallow oven dish
On separate large bowls, place the shredded pastry and add the barbecue ghee and mix evenly.
Then, using the mixture, take half of it and arrange in the greased bowls.
Next, take the Kiri squares, sugar, rose water and yogurt and evenly mix them up to the point you obtain a smooth mixture. Next, get a layer of the Kiri mixture, sprinkle the pine sliced nuts and lastly add the remaining shredded pastry mixture. Set it in the oven and leave it to bake for about 15 to 20 minutes at a temperature of 1800C. Either, you could let it bake until you see it turn golden.
As it is baking, by the use of boiled sugar, water, and orange flavored water prepare the sugar syrup, and mix them for approximately ten minutes.
Then, place the sugar syrup on top and the meal is ready to serve.
