In an Undercover Boss USA Program, the Subway’s Chief Development Officer Don Fertman was chosen to go undercover and perform several jobs in different franchises of the subway. This assignment will analyse the job of sandwich artist and a store manager. The Sandwich Artist, Jessi was observed in the store # 562 Orlando, FL. To analyse Jessi’s job, Don Fertman personally practiced the job of sandwich artist. Later, he interviewed Jessi regards her qualification, age, and background information. The other job analysed was of the store manager, Duane at store # 31255 Buffalo, NY. This store was in an unusual location so it required restaurant owner also offering delivery services to customers to maintain sales.
Sandwich Artist Job Analysis
The job of the sandwich artist requires to greet and serve customers, quickly prepare food, maintain sanitation and food safety standards, and at the same time handle or process light paperwork. The most important part of this job is quick customer services. Therefore, this job requires a young person who has good time management and learning skills; one who can learn recipes of different sandwiches, prepares within the shortest possible time or about two minutes, and greet customers .

Job Duties:
- Show up a cheerful and cooperative behaviour to the customers and prepare good food for them as according to their order.
- Demonstrate thorough understanding of menu items and guide customers about the taste of every ingredient.
- Use point of sale system and compute the exact bill for the customized orders. Collect payment from customers and return change.
- Perform cash-in-procedure for all the products.
- Prepare food tidily in a timely manner and as per the instructions or formula.
- Clean kitchen, serving area, and all other portions of the restaurant to give a clean look.
- Ensure the food safety and sanitation standards while preparing and serving the customers.
- Ensure the sandwich stock is sufficient throughout the shift.
- Follow up standards, procedures, and formulas exactly the way as set in the Subway Operations Manual.

Store Manager Job Analysis
The job of this specific subway restaurant required a store manager to take phone calls of the customers, greet them, record the order information that is sandwich requirements and address, estimate the bill, and inform to the customer on the phone. The store manager must record all information very carefully and in a neat handwriting, so sandwich artist and others could understand the order. Next, the store manager has to coordinate all the orders to be delivered. The delivery of orders must be given to customers in time. The store manager greets the customer, deliver orders, issue bill to the customer, and collects the bill amount. The primary role of store manager at the restaurant is to maintain high quality restaurant operations, ensure customer satisfaction, analyse financial performance, and maintain quality of the sandwich. Don Fertman interviewed Duane informally and collected information about his background .
