My general plan for increasing beverage sales involves the introduction of a beverage list on the menu. The menu will be small with a weekly special or wine that the staff will recommend. Next, I will have to train the wait staff on the basics of wine service. Given the advent of the internet and videos available online, this can be done with no cost to the company. With weekly wine specials, staff recommendation, and a wait staff that is knowledgeable in wine service, we will be able to increase beverage sales. Also, one of our core competencies seems to be the deserts. This is perfect as we can try to sell the wine or other beverages along with the deserts. These will be wine pairings. The wines we serve will be from smaller vineyards that are relatively unknown, so they will sound exotic or premium. Furthermore, we will offer small wine tastings so that the customers may taste before they buy a bottle or a glass.
I can increase wine sales by revamping the manner in which we advertise and present the wine. As stated above the wine will be exclusive and deals with vineyards must be made in order to carry their wine. Furthermore, there will be small free of cost wine tastings to introduce customers to our wines.
The two areas in the operation that I can explore in order to reduce the costs associated with running the bar are optimization of the beverage items listed, types of beverages, and staffing. The cost of serving wine can be decreased by selling wine by the glass and corking the remainder. We take advantage of the fact that the wine does not spoil, and we can charge a premium for wine by the glass. In addition, we can sell wine by the bottle as well. As stated above, the wines we serve will be the ones that may not be well known and therefore can be seen as premium wine. The customers will not likely buy a bottle without first buying a glass of wine to taste it. Upon enjoying the wine, they may elect to buy a bottle. We make money either way, from the glass we sold, or if the customer enjoys the wine, we profit from both the glass and the sale of the bottle.
