This paper describes fusion cuisine and its historical influences. It describes pre-modern culinary exchange between remote cultures. The spread of curry and noodles are observed as cases that help explain the pre-modern spread of culinary influences. Combining of different ethnic cuisines in 1970s led to the development of a special fusion style in California. A simple approach and high regard for fresh local foods were especially important.
