Abstract
The composition of the foods people consume has a significant influence on their health. Whole certain components in certain foods offer protection against the development of certain disease conditions, the consumption of other components at certain levels might predispose one to certain diseases and disease conditions. The processing industries have a role to inform the consumer of the ingredients in their food products. This is necessary for the consumer to make informed decisions about their dietary choices.
