Fat-soluble vitamins include A, D, K, and E whereas water-soluble vitamins are ascorbic acid, thiamin, riboflavin, niacin, pyridoxine, folacin, vitamin B12, biotin and pantothenic acid. They are referred to as fat-soluble because they can only dissolve in organic solvents and as a result, their transport within the body is similar to the fats. The water-soluble vitamins, on the other hand, dissolve in ionic solvents like water.
