Combining of different ethnic cuisines in 1970s led to the development of a special fusion style in California. A simple approach and high regard for fresh local foods were especially important. Several chefs initiated the practice that soon spread throughout the world. Principles of successful combining of different cooking styles in fusion cuisine are explained at the end.
